3 INGREDIENT BANANA COOKIES

3 Ingredient Banana Cookies

I have various cookie recipes that I love but I only have two
which I can make for breakfast. Luckily both recipes are
extremely easy to make.

As it is Day 1 of Blogtober I thought I would show you how to make these easy 3 ingredient cookies.

3 INGREDIENT BANANA COOKIES RECIPE

This recipe is sugar freedairy free, soy free, nut free, vegan and delicious

3 Ingredient Banana Cookies

INGREDIENTS

1 large (over) ripe banana*
50g / 1/2 a cup of quick oats or gluten free oats
1 tsp of pumpkin seed mix or mixed fruit

METHOD

1.  Slice half of the banana into coins (1/2 cm thick) and mash the other half with a fork to make a banana mixture.
2.  Set the banana coins aside and put the banana mixture into a bowl. Add the oats and seed or fruit mix then combine with a wooden spoon.
3.  Then shape into 3 or 4 circular cookies then place on to a tray lined with baking parchment then add the remaining banana pieces on to each cookie.
4.  Cook in the oven for 15 minutes at 180C. When the cookies have finishing cooking eat immediately or leave to cool for 10 minutes but please remember to eat them as
soon as possible*.
5. These cookies are delicious served with a hot drink or as part of a breakfast bowl and as a dessert served with ice cream.

---------------------------------------------------------------------------------

Notes:
1.  Use a banana that is overripe and slightly brown in appearance as the flesh will be extremely sweet so it will act as a sweetener and a sugar replacement  for the cookies.
2.  This recipe is meant to be eaten as soon as possible due to lack of oil or other ingredients which normally help to preserve cookies.
3.   If don't eat them straight away put them in a container in the refrigerator for no more than a day and serve with nicecream or dairy free yogurt .
